Monday Muffins

I made these muffins yesterday and they are *sooo* good!



Blueberry Lemon Muffins

2 1/2 cups flour
3/4 cup light brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon finely grated lemon rind
Juice from the two lemons
1 1/4 cup milk
1/2 cup oil
1 egg
1 pint bluberries

Heat oven to 350°F. Sift the flour, sugar, baking powder and salt in a medium bowl. In a large bowl, whisk the egg, lemon zest and juice, milk and oil and add the flour. Stir in blueberries. Mix just until combined. Drop into muffin tins, lined for easy cleanup. Bake for about 15 minutes or until tops are golden and spring back when pressed.


I made both regular size muffins and mini muffins with the batter. Also used 1/2 wheat flour. It made about 12 regular muffins, and 12 mini muffins. They turned out nice and moist!!!! Mmmm...

Sun time.

This weekend we had another fun little trip. We went down to Manhatten Beach to spend time with my 2 little cousins, Monica and Dustin, while mommy and daddy were in Hawaii. Here's some pics of the cuties.

So that was fun! We also stopped by my where my other uncle lives, about 10 blocks away. He lives with his long time girlfriend in a place that is attached to her son's house. So her son is a famous producer and their home was amazing!! Two blocks from the beach and you could see it from their windows. Platinum albums covered the walls (britney spears..justin timberlake...dreamgirls soundtrack...boys II men...etc). Very cool! So that's about it. Time to go eat my yummy cupcake from the bakery there ;)

Another boring update

Not a whole lot going on lately dudes. House hunting continues; have not heard out about our house #1 offer from a month ago and just heard today that our house #2 offer was not taken even though we had the highest offer. It's discouraging because the more you look, every single day, the more you hate going back to your lame apartment. Also, after this month I will have a few thousand bucks saved up for home stuff...so I guess that is a plus for taking it slowly too. But man, I can imagine if we didn't have rent to pay! I am just glad that we aren't really in a hurry or have some kind of a deadline that we need to find something by. Although, it would have been a nice birthday present :(

Long weekends are the win!

We had a semi-eventful 4th of July weekend. It kicked off with a drive to Fresno to see the top 10 American Idols from this season perform at the Save Mart center. It was actually really cool, mostly because of all the rockers this year. Each contestant did 3 songs, except David Cook who did 4 (as well as a few group songs). We got to hear some Queen, The Beatles, Foo Fighters, Michael Jackson...other amazing stuff that I know I'm missing. From there we headed up to Shaver for the weekend. Jeans


I used to be way into buying jeans; I loved them and got a new pair like, every month.

Now I am just annoyed! The strechy jeans stretch out during the day and become too baggy; yet non-stretchy jeans are all tight after you wash them. So what's the deal? Am I missing some kind of trick!? Ugh!!!
